Green Tea

I ordered Sakuma Market Stand Green Tea on principle -- I want Washington farmers to thrive, and we ought to be growing green tea -- but once I started to drink it, my motives changed to pure enjoyment. It requires longer to steep than most green teas I drink; I've found about 5 minutes rather than my usual 2 minutes at 175 degrees. The resulting tea is rich, a little spicy, and not at all grassy. There is almost a hint of cinnamon in it (perhaps from proximity to berries?) and it's surprisingly complex. Most green tea is simple, but this is more like a good red wine in terms of having lots of interesting notes as you drink it. (All of the notes are both pleasant and harmonize well.) All in all a truly delicious tea, quite distinct from any of the hundred or so varieties of green tea I've tasted previously.
